Açai bowl without bananas

Açai berries are loaded with antioxidants, vitamins and fibre. Açai bowls are very popular but quite often include too much bananas for me. However, making an Açai bowls without a banana is easy and below is a recipe where berries make it sweet and a full fat coconut milk makes the mixture smooth. Having one of these bowls once in a while feels like having an ice cream on a good day 🙂

Ingredients

1 cup blueberries, frozen 

1/2 cup mixed berries, frozen 

1/4 cup full fat coconut milk, solid part

3/4 cup full fat coconut milk, the liquid 

2 tsp Açai powder

2 tsp protein powder, vanilla flavour (or pure vanilla)

pinch of salt

Method

Let the frozen berries wait for about 5-10 minutes after taken out of the freezer. That’s just to be kind to your blender, but don’t let them thaw completely.

Add everything to a powerful blender or food processor and let it run until the mixture is smooth as silk. Stop from time to time to scrape down the sides.

That’s how the texture should be.

Pour into a bowl or 2 small bowls and decorate with your favourite, healthy toppings. 

I’ve used f.ex. toast coconut flakes, nuts, seeds, fresh berries, almond butter, fruits, popped quinoa, gluten-free oats and/or cocoa nibs. 

Toppings on this one are toast coconut flakes, pecan nuts, popped quinoa, blueberries, pomegranate and walnuts.
Here’s a different one with oats, cashews, pears and a strawberry.

In this latter bowl I substituted the coconut milk with avocado and oat milk. That worked well too. Will publish the recipe at a later date.
