Veggie Christmas wreath 🎄

My Christmas present to you is this healthy and beautiful Christmas wreath. It’s a nice starter for the Christmas table, as the main is often on the heavier side. Next year you might as well use the same ingredients and have it as a main.

Ingredients

Leafy greens of your choice, quantity depends on how many starters you’re making

100-200 g broccoli

some cherry tomatoes 

1 pomegranate 

thyme stems (optional)

Method

Remove the seeds from the pomegranate and put some of it on a clean cloth or a paper towel to remove the liquid. 

Arrange the leafy greens in a circle on a plate to form your wreath. 

Divide the broccoli into florets. If you have time – and want the wreath to look really pretty – make them as round and similar in size as possible. Put the florets on top of the lettuce.

Then it’s the cherry tomatoes. Arrange them as if you were decorating a Christmas wreath with baubles.  

Finally sprinkle the pomegranate seeds over the wreath and pin a few thyme stems as well if you like.

Add a bowl with the white sauce in the middle and pour the green sauce into a small mug. Serve that with the veggies. It’s nice to make the sauces at least a couple of hours ahead, or even the day before. They flavour increases with time  and both sauces keep well in the fridge for a few days.

Green sauce

Ingredients

100 g olive oil

1/2 lemon (the juice)

1-2 garlic cloves

20 g parsley 

1 good handful basil

3 stems thyme, the leaves

salt and black pepper

Method

Peel the garlic and cut coarsely. Add everything to a blender and let it run until the sauce is beautifully green and smooth.

White sauce

Ingredients

1 cup oat milk yogurt  (or any yogurt you like, vegan mayo is also nice)

1-2  garlic cloves

1/2 cucumber

1 handful of fresh coriander (or mint)

salt and black pepper

Method

Peel the garlic and chop it finely. 

Peel the cucumber, remove the core, and cut the flesh into small cubes.

Chop the coriander (or mint)

Add everything to the oat milk yogurt, blend well and season to taste.
