In Iceland we’re celebrating Gay Pride over the weekend. Due to Covid there’s no parade, but it’s possible to celebrate diversity in many ways. Some people bake rainbow cakes, but I chose to do a veggie and fruit platter. I didn’t get the purple veggies I’d have liked but cherries are nice anyway. You can of course use any fruit or veggies as long as the colours are close to the intended ones.
