Grilled courgette and hot tomato sauce with black olives 

Ingredients

2 courgettes

1 and 1/2 tbsp Graenmetisblanda (spice mix for veggies), from Mabruka

2 tbsp olive oil, from Filippo Berio

1 and 1/2 stk red onion

4 garlic cloves

1/2 red chilli

1/2 yellow chilli

2 cans chopped, organic tomatoes

3 tbsp tomato paste, organic

1 tsp Graenmetisblanda (spice mix for veggies), from Mabruka

1/2 cup black olives

1/2 – 1 cup water

olive oil for frying

If you can’t do that you can make the recipe by using similar seasoning for use your favourite spices.

30% tabel, 20% black pepper, 20% zaatar, 10% salt, 10% dried garlic, 5% red onion and 5% coriander

Method

Slice the courgettes. Add them to a big bowl and toss with 2 tbsp of olive oil and 1 tbsp of spice mix. Make sure it’s evenly spread on the courgette slices. Let it marinade while making the sauce.

Peel and chop the red onion, garlic and chilli. Fry for a bit on a hot skillet and when it has taken on some colour add the teaspoon of spice mix followed by the tomato paste, tomatoes and water.

Let it simmer for about an hour. Stir from time to time and if the sauce becomes too thick add more water.

Grill the courgette slices on a boiling hot grill pan. It’s different how long time it takes, because in this case size matters 🙂 Also pans and even stoves are different. You just try it out and find a perfect time. In my case I grilled the courgette slices 3-4 minutes on the first side and a bit shorter on the latter.

Add the sauce to a serving plate and then arrange the courgette on top of it. Green salad goes very well with this.
