600 g cod fillets
10 cherry tomatoes
1 handful of sugar snaps
5 small peppers
2 tbsp Fiskikrydd (Fish Seasoning) from Mabrúka (possible to order from their website)
1 tbsp Sítrónukrydd (Lemon mix) from Mabrúka (possible to order from their website)
2 tbsp olive oil
salt and black pepper
basil leaves and slices of lime for garnish (optional)
Add the Mabruka seasoning to the olive oil and brush it on the cod fillets. Let it marinade for at least half an hour.
Finely slice the fennel and the mushrooms coarsely. Cut the small peppers in strips and the cherry tomatoes in halves.
Put a bit of olive oil in a hot oven proof skillet. Fry the veggies for a short time. Season a bit with salt and black pepper.
Arrange the fish on top of the veggies in the skillet and put it in the oven – under the grill – for about 5-6 minutes.
Remove the skillet from the oven and let it rest for a bit. Garnish with basil leaves and slices of lime if you like.
Green salad is a nice side dish with this, but you can also serve it with f.ex. potatoes or rice.
The recipe is sponsored by Mabruka.
Mabruka spices are completely pure, picked and packed by hand. One can order online from their website.
If you can’t do that you can make the recipe by using similar seasoning, but it will of course never be the same.
