Chocolate lava with mixed nuts, popped quinoa and cranberries

Ingredients

100 g 100% chocolate (if you use 85% instead there’s no need for cocoa butter)

1 tbsp cocoa butter

1/2 tbsp coconut oil

12 drops stevia or monk fruit 

1 tsp pure vanilla 

1 cup mixed nuts, f.ex. cashews, almonds, pecan, walnuts and hazelnuts 

1/2 cup quinoa

1/4 cup cranberries

Method

Coarsely chop the nuts.

Break the chocolate and place in a heatproof bowl along with the coconut oil and cocoa butter. Melt over water on low heat.

Add stevia and vanilla. Carefully stir in the rest of the ingredients.

Spread on a tray lined with baking paper. Freeze for at least 2 hours and break into pieces about 15 minutes before served. Keeps well in the freezer.
