Avocado and tuna mash 

Ingredients

2 avocado

3 eggs

1 can tuna

1/2 lemon, the juice

black pepper and salt

season it with any spices you prefer, I normally use chili and Indian curry seasoning. At times garlic powder as well.

Capers, finely chopped red onion or mustard are also good addition. Not all of it together though.

parsley or coriander

Method

Boil the eggs for 10 minutes and cool.

Cut the avocado in halves, remove the pits and scoop the flesh onto a plate.

Squeeze the liquid from the tuna.

Squeeze the juice from the lemon over the avocado, sprinkle with the seasoning and use a fork for mashing. If you’re using the capers, red onion or mustard add it to the mix at this point.

Use an egg slicer to cut the eggs finely and mash into the avocado.

Stir in the tuna.

Season to taste. This can be a tad bland so I always use a lot of black pepper. It’s good for us anyway. And lots of spices you like.

Use the mash as a topping on a gluten-free bread and garnish with parsley or coriander.

It’s also nice with these bread rolls.

Bread isn’t necessary. One can simply use a salat leaf or lettuce instead.
