1 cup blueberries, frozen
1/2 cup mixed berries, frozen
1/2 avocado
1/3 cup almond milk, or any other plant milk you prefer
2 tsp Açai powder
1 tsp pure vanilla, from Rapunzel (or vanilla flavoured protein powder)
Method
Let the frozen berries wait for about 5-10 minutes after taken out of the freezer. That’s just to be kind to your blender, but don’t let them thaw completely.
Peel and cut the avocado into cubes.
Add everything to a powerful blender or food processor and let it run until the mixture is smooth as silk. Stop from time to time to scrape down the sides.
Scoop into a bowl or 2 small bowls and decorate with your favourite, healthy toppings. On the photos I used blueberries and granola, but I’ve also used toast coconut flakes, nuts, seeds, fresh berries, almond butter, fruits, popped quinoa, gluten-free oats and/or cocoa nibs.
