Ingredients
1 cucumber
1-2 garlic cloves
1 lemon, the juice
2-4 small ice cubes
1/4-1/2 cup fresh mint
salt and black pepper
Method
Coarsely slice the cucumber and rinse the garlic. Squeeze the juice from the lemon.
Add everything to a powerful food processor or blender and let it run until it’s is well blended and smooth.
How much mint, garlic and seasoning you use is completely up to your taste.
I used mint and poppy seeds as a garnish but it’s of course possible to use anything you like.
The soup served in small bottles as part of a buffet.
