Cod fillets Mabrúka style

Ingredients

600 g cod fillets

10 cherry tomatoes

1 fennel

1 handful of sugar snaps

5-6 mushrooms

5 small peppers

2 tbsp Fiskikrydd (Fish Seasoning) from Mabrúka (possible to order from their website)

1 tbsp Sítrónukrydd (Lemon mix) from Mabrúka (possible to order from their website)

2 tbsp olive oil

salt and black pepper 

basil leaves and slices of lime for garnish (optional)

Method

Add the Mabruka seasoning to the olive oil and brush it on the cod fillets. Let it marinade for at least half an hour. 

Finely slice the fennel and the mushrooms coarsely. Cut the small peppers in strips and the cherry tomatoes in halves.

Put a bit of olive oil in a hot oven proof skillet. Fry the veggies for a short time. Season a bit with salt and black pepper. 

Arrange the fish on top of the veggies in the skillet and put it in the oven – under the grill – for about 5-6 minutes.

Remove the skillet from the oven and let it rest for a bit. Garnish with basil leaves and slices of lime if you like. 

Green salad is a nice side dish with this, but you can also serve it with f.ex. potatoes or rice.

Fiskikrydd (Fish Seasoning); 20% hand picked zaatar, 10% fresh black pepper, 20% pure, natural salt, 20% handmade lemon zest, 20% tabel mix and 10% mint.

Sítrónublanda (Lemon Mix);  40% fresh black pepper, 30% lemon zest and 30% pure, natural salt.
