Ingredients
50 g blueberries, strawberries and pomegranate, or some of your favourite berries and fruits
1 can full fat coconut milk
6 raspberries
1/2 tsp vanilla
10 g 85% dark chocolate
Method
Remove the seeds from the pomegranate, cut the strawberries in half or into cubes or slices.
Whip the coconut cream and make sure the coconut milk and bowl are cold. I use everything from the can, but it’s a matter of taste, some use only the solid part on top. When the cream is fully whipped continue while adding the vanilla and one raspberry at the time. Stop when the berries have mixed in well and the cream is beautifully pink.
Layer the berries/fruits and raspberry cream in a glass or a bowl and decorate with grated dark chocolate.
